I haven't purchased one of these before. Does one buy a misc. pack of them, or do you need to know the size?

It has to be a specific size. I picked mine up from my dealer, Scuderia West.
That said, many owners do not replace the crush washer at each oil change, but only if it's looking, well, crushed, deformed.
I've gone both ways and never had a leak. Nowadays, since they're probably the least costly moto item I can purchase, I just buy one when I pick up my oil as cheap insurance.

I traced the outline of the drain plug and check plug washers. I'll post the size when I get new ones.

...and using the closest fit. No issues so far in the 10k miles since the first use of these.

SOOO after doing my oil change I would like to report all is good, shifting is "smoother" *could be my imagination?
I used amazon's finestest/cheapest liter of Germany's liqui moly synthetic 10w-30 API SL MA2 4T
and the washers I used where:
Drain plug: 14mm (ID) X 19mm (OD) X 1.5mm thickness
The oddly named "fill plug" / overflow plug: 8mm (ID) X 16mm (OD) X 1.5 thickness
*The washers weren't a perfect swap but they where thicker along the outer edges so I figure it's the right kind of error. I have no idea if they have ever been replaced so I went ahead and ordered the mix 110 pc copper set on amazon so I'm probably set for life (SUCH A CHEAP SET the picture on the box doesn't match the box lmao).
