Normally I take 1% for 1 km. This was my first mistake. Germany isn't as flat as my normal roads and going uphill needs more power.

Normally driving day: start at 9, do top up charging (or sometimes more then one) and getting to my next hotel, B&B or pension. In my planning I took 1h charging = 15 km more (can I please have a faster charger for my next trip )

You don't want to do that, 2 hours at a McDonalds is more than enough for me. I've tried to find top-up charging places where there is something to eat/see/do but I was sometimes happy I could simple charge. Full charging was at night. I special asked a charging place when I booked a sleeping place.
The first thing you have to do is planning your trip and search for charging and sleeping places.
But as always there will be surprises: charging places not working or not to be found, the evil word: Umlautung, charge pass thenewmotion not working on Ladenetz chargers, holidays (29mei) => everything closed
I've luckily had a laptop with me so I could always change my route when necessary.
Yep, it was fun but not always easy...
